Origin
Olives from our groves in the Alto Gudalquivir Region (Córdoba Province - Andalusia. Spain). Own Production: Olive oil traditional producers since 1895. All crops of our own. Harvesting time: Between late October and early November in the called "envero time" (the Véraison or the on set ripening). This is the period of the most efficient production in terms of quality all along the the year.

Taste
Deep green colour, with a balanced profile, a mid-intense complex fruitiness with a great diversity of vegetable aromas and green almond combined with bitter and sweet recalls. Pleasant in mouth, reminds of Mediterranean herbs and ripe fruits. Identifiable in nose and mouth. The mouth feel brings to a silken and fresh citric taste. Its stylish aftertaste stands out with a great persistence on the palate. Complex and fresh, elegant, even cheeky. Straightforward notes.
Gastronomy
Ideal for cooking fishes, preparing vinaigrettes, dressings and mayonnaise. Suitable in substitution of butter for baking.
